Blackberry & Lemon Ice Parfait, Meringue & Almonds
It is the blackberry season! This is a very quick & refreshing recipe that I made this weekend. I used my thermomix but you can make it with any kitchen food processor.
Serves 6 – 15 minutes
Ingredients
- 250 g mascarpone cheese
- 250 g wild blackberries
- 1 lemon (zest & juice)
- 20 g glucose (optional)
- 2 tablspoons honey
- 1 egg white
- 100 g flaked almonds
- 100g meringues
Preparation
Put all the ingredients, except almonds & meringues, in your thermomix. Mix for 15 seconds, speed 6. Then add the whip and mix another 10 seconds, speed 3. Cover a silicone cake tray with plastic wrap. Pour half of the blackberry mix. Add some meringues broken into pieces and cover with almond flakes. Pour the rest of the blackberry mix and store in the freezer for at least 6 hours. Take off the mould, decorate with some meringues and almonds and serve.
