My friend Horti’s Grilled Beet Burgers (Vegan)
My friend Hortense told me about the great Green Kitchen Stories website. I absolutely love it. I am not a great fan of gluten-free/dairy-free/vegan or any x-free style of food, but I have to say, all the recipes I have tried from this website so far are absolutely great. You really do not feel like you are eating vegetarian. These grilled Beet Burgers are my friends’ favourite.
Serves 6 to 8
Ingredients
- 4 or 5 raw beetroots
- 150 g rolled oats
- 1 small onion
- 200 g feta cheese
- 2 cloves garlic
- 2 eggs
- Fresh basil or coriander
- 2 tbsp olive oil
- Salt & Pepper
- Burger/sandwich bread
- Toppings according to your taste: lettuce or cabbage, avocado, tomatoes, mushroom, onions, mustard, ketchup, etc.
Preparation & Cooking
Peel and grate beets, onion and garlic. Place the grated vegetables in a large mixing bowl. Add olive oil, eggs and rolled oats and mix everything. Add feta cheese, basil, salt and pepper and stir to combine. Set aside for about 30 minutes, so the oats can soak up the liquid and the mixture sets (this step is important for the patties to hold together). Try shaping a patty with your hands. If the mixture is to loose, add some more oats. Form 6-8 patties with your hands. Grill the beetroot burgers a couple of minutes on each side or fry them in a frying pan. Serve with grilled burger/sandwich bread and toppings of your choice.
