Steamed Monkfish Tajine Style: A New Year’s Eve Feast 🎉

Level: Easy as Pie
Preparation Time: 15 minutes of culinary magic
Total Time: 1 hour 45 minutes of gastronomic adventure
Servings: 4 portions of joy

Magical Ingredients

– 100 g of onion, cut in half (like a heart)
– 4 cloves of garlic, to keep the vampires away
– 10 g of fresh ginger, for a hint of spice
– 400 g of tomatoes, peeled, deseeded, and ready for action
– 4 sprigs of fresh parsley and 4 of coriander, the festive herbs
– 30 g of olive oil, liquid gold
– Juice of one yellow lemon, for the zesty touch (see my express recipe here)
– ½ a preserved lemon (optional), for a mysterious twist
– 3 tsp of cumin seeds, the little stars of the recipe
– ½ tsp of cayenne pepper powder, for the brave
– 100 g of water, the essence of life
– 600 g of monkfish, the evening’s star, cut into four pieces
– 100 g of carrots, cut into rounds like golden coins
– 1 tsp of dehydrated fish stock, the secret of the deep sea
– 1 tsp of salt, adjust to your taste
– 500 g of waxy potatoes, cut into cubes like little treasures

Preparation

1. Put onion, garlic, and ginger in the bowl of your food processor. Chop for 5 sec/speed 5, like a magic trick.
2. Add 200 g of tomatoes, parsley, coriander, then chop 4 sec/speed 5. The potion is taking shape!
3. Pour in olive oil, lemon juice, preserved lemon, cumin, cayenne pepper, and water. Mix for 10 sec/speed 1. The magic is happening!
4. Add the monkfish and mix gently. Let it marinate for 1 hour, stirring occasionally. Then place the monkfish in the Varoma. Keep the marinade aside.
5. Add carrots, fish stock, remaining tomatoes, and salt to the bowl. Place the potatoes in the steaming basket and start steaming: 15 min/Varoma/speed 1. Then add the Varoma and continue for another 15 min. The grand finale!
6. Remove Varoma and basket. Serve very hot, sprinkled with fresh coriander. A dish worthy of a celebration!

Tips and Tricks

– If you’re less adventurous, reduce ginger and cayenne. The charm lies in these bold spices.
– For added flavor, mix olive oil with argan oil, sweet and fragrant. A touch of exoticism!
