Xmas Apéritif Mini Pizza
The idea for this recipe came to me over the week-end. I was organising a Xmas dinner with friends and each one of us had to bring something. There were some kids with us, so I thought making some pizzas with various toppings and some shapes reminding us of Xmas would be a good option for all of us. The main difficulty in this recipe is due to the fact that pizza/bread dough is by nature very soft and elastic. Hence cutting them using some small xmas cookie cutters is a bit tricky. You just have to be very careful and slow….
For 2 large mini pizza trays, which means an apréitif for approx. 10/12 people
Pizza dough

Then roll your dough thinly and using come xmas cookie cutters, cut into mieces for each mini pizza.
Toppings
Just be creative, anything is possible! I personnally made 3 different toppings.
For the growns-up: Apple & White Sausage (“Boudin Blanc”)
Cook in a saucepan with a little bit of butter one diced apple. Add one diced white sausage. Season to taste and add a pinch of curry for an exotic twist. Spread on each mini pizza one teaspoon of fromage frais or sour cream. Add some apple & white sausage on top, then bake for 8 to 10 minutes at max temperature (250°C).
For the growns-up: Chestnut / Mushroom / Roquefort
Dice the mushromms (any style) and fry in a saucepan with a bit of olive oil. Add the diced chestnuts. Season to taste. Spread on each mini pizza one teaspoon of fromage frais or sour cream. Add some Chestnut & Mushroom topping, then bake for 8 to 10 minutes at max temperature (250°C).
For the kids: Classic Cheese & Ham Mini Pizzas
Diced the ham. Spread on each mini pizza a teaspoon of tomato sauce. Add a bit of grated cheese, then some ham and an olive. Sprinkle with some provencal herbs and bake for 8 to 10 minutes at max temperature (250°C).
