Yoghurt cucumber in a mint&wasabi smoothie version
Serves 2-3 – 10 minutes
Yoghurt cucumber, (almost) everyone knows. Quick, healthy and refreshing, perfect for the summer! But when I have made it 3 or 4 times in a row, I very quickly get bored with it. This is why I imagined this cucumber smoothie version, ading an exotic ingredient, wasabi, which adds some “peps” to it. The presentation as a smoothie allows you to have it as a summer drink, using a straw, or as a cold soup, just like a green gazpacho.
Ingredients
- 2 cucumbers
- 100ml ice cold water
- 1 natural yogurt
- 4 or 5 fresh mint leaves
- 1/4 teaspoon wasabi
- Salt

Using a mandoline, slice the cucumbers thinly. I personnally prefer to leave the skin on, but this is entirely up to you. Put all the ingredients in a blender, mix, and serve! Can it be any easier than that? To serve as a cucumber smoothie/drink, you might want to add a bit more water or milk to make it more liquid.
